We eat a LOT of rice. I love rice. Rice is one of the most versatile grains. I really enjoy experimenting and coming up with new rice dishes. This delicious vegetable pilaf goes with almost any dish.
1 C Texmati Rice (Texmati gives this a wonderful nutty flavor but any white rice will do)
1 C Broccoli, Chopped
1 C Cauliflower, Chopped
1/2 Red Onion, Chopped
1/2 Green Onion, Chopped
1 Roma Tomato, Chopped
2 Garlic Cloves, Crushed
2 C Chicken Broth (substitute vegetable broth for a vegetarian dish)
1 TSP Salt
1/2 TSP Black Pepper
Combine all ingredients in sauce pan over medium heat and bring to a boil. Lower heat to a simmer and cover pan. Cook for 20 minutes. Let sit for another 10 minutes. Serve and enjoy!
