Chicken & Rice


I received this awesome Pressure Cooker from IMUSA. I wanted to use it to make some comfort food. Chicken & Rice is my comfort food. It is so fast and delicious in the Pressure Cooker that this is the only way I will cook it from now on!



2 LBS Chicken (I used breasts)
1 Onion, Chopped
1 Green Pepper, Chopped
2 Tomatoes, Chopped
3 Ears of Corn, Kernels removed
1 TBSP Olive Oil
1 Pinch Saffron (About 1/8 TSP)
1 TSP Turmeric
1TSP Cumin
1 TSP Garlic Powder
1 TSP Ancho Chile Powder
1 TSP Smoked Paprika
1 TSP Chicken Base
3 C Water
Salt
Black Pepper

Sprinkle a little of each spice on chicken and brown in olive oil. Once chicken has browned on both sides add veggies and the rest of the spices. Cook for 1 minute. Add Water and Chicken Base. Place lid on Pressure Cooker and seal. Cook for 20 minutes. Serve over cooked rice.
