Chicken Fried Rice


Fried Rice is one of my go to recipes for leftover meat. I had a TON of leftover chicken in the refrigerator so I decided on Chicken Fried Rice. It's delicious and filling as well as being a quick meal to make. I use a rice cooker to make my rice and I add seasonings to my rice while it is cooking. For Fried Rice I will usually add some garlic, diced onion and ginger.


2 to 3 C Cooked Rice
2 Cooked Chicken Breasts, Shredded
1 1/2 C Frozen Chopped Broccoli
1 PKG Bean Sprouts
4 Green Onions, sliced
1 Can of Baby Corn, Drained
3 Eggs
1 TBSP Butter
Gluten Free Soy Sauce
Salt & Pepper

Scramble eggs and set aside. Cook frozen broccoli then add chicken, bean sprouts, green onions and baby corn. Saute until warm. Add eggs and rice. I use 3 TBSP of soy sauce you can use how much you like. Add butter, salt & pepper to taste. Mix together and serve. Enjoy!
