Bahn Mi #Gluten Free

Have you heard of The Ginger People? No, this is not a group of redheads! (Although my youngest is a ginger kid!) The Ginger People is actually a store that specializes in ginger products. I have been using the Organic Pickled Sushi Ginger for about a week now. I added it to my recipe for Maple Glazed Salmon. I used it in some pork meatballs that I made and they were honestly the BEST pork meatballs that I have ever eaten. Pickled Sushi Ginger is not just for sushi!

Last night I used the Pickled Ginger in a Bahn Mi. Bahn Mi is a Vietnamese sandwich that is traditionally made with pickled daikon radish. I substituted pickled ginger for the pickled daikon and thought it was fantastic!

1/2 C Rice Wine Vinegar
1 TSP Granulated Garlic
1 TBSP Pickled Ginger
1 TSP Cilantro, Chopped

Mix marinade ingredients in a zipper bag and add meat (I used 4 bottom round steaks). Marinate for at least 4 hours.

Slice meat and saute in frying pan with a little oil.

Assemble your sandwich toppings.

I used pickled ginger, radish, green onion, cucumber, carrot and fresh cilantro.

Assemble your sandwich, I used a gluten free baguette but you can use whatever roll or bread you like!
