There are so many variations on Fried Rice and I love them all. I've shared recipes for Pork Fried Rice, Chicken Fried Rice, Pineapple Chicken Rice Bowl and now Pineapple Pork Fried Rice!
One of the things I love about this recipe is that it works well with any protein. Swap out the pork for chicken, shrimp or even tofu and it will still be delicious. One of my favorite things about fried rice is the vegetables. Use what you find in season. You can't go wrong!
3 C Long Grain Rice, Cooked
2 TBSP Olive Oil
4 Boneless Pork Chops, Cut into bite size pieces
4 Garlic Cloves, Minced
1/2 Red Onion, Chopped
1/2 Sweet Red Pepper, Chopped
4 OZ. Snap Peas, Rinsed
4 Green Onions, Sliced
1 TBSP Pickled Sushi Ginger, Chopped
1-8 OZ Can Crushed Pineapple
1/4 C Gluten Free Tamari Sauce
1 TBSP Worcestershire Sauce
Salt and Pepper to Taste
Heat oil in a wok or large frying pan over medium high heat. Add pork and cook until brown on both sides.
Add vegetables and cook for 2 - 3 minutes.
Add pineapple, rice, Tamari sauce, Worcestershire sauce and seasonings. Mix thoroughly.
Serve and enjoy!
