Chicken Fajitas

Onions and garlic are two of my favorite ways to add flavor to a dish. I picked up the most wonderful spring onions and chives while I was at the Farmer's market this past Saturday. The spring onions had a slight blush of red. A gorgeous color and the flavor didn't disappoint.
Herbs grown locally seem to have so much more flavor than herbs found at the grocery store. In fact I find the same thing with all of the produce that I pick up at the farmer's market. So much more flavor. It leaves the produce I buy at the grocery store feeling flat and flavorless.

These chicken fajitas are all about flavor. This is one of those dishes where you take your time and savor every bite.

Vegetables for Fajitas

2 TBSP Olive Oil
4 Chicken Breasts,Chopped into Bite Size Pieces
2 TBSP Fresh Chives, Chopped
4 Garlic Cloves, Minced
1/4 Fresh Cilantro, Chopped
4 Green Onions, Sliced
1/2 Red Onion, Sliced Thin
1/2 Red Pepper, Sliced Thin
1 Tomato, Sliced Thin
1 TSP Cumin
1 TSP Oregano
1 TSP Onion Powder
1/2 TSP Cayenne
Salt& Pepper to Taste

Chicken in hot oil

Preheat oil in a large frying pan.

Add chicken, salt & pepper, cumin, onion powder, cayenne and oregano.

When chicken is brown on both sides, add vegetables.

Vegetables for Fajitas

Cook vegetables until tender crisp and tomatoes begin to wilt.

Serve on tortillas with rice and beans. Enjoy!
