Shish Kabob

Grilled Shish Kabob

Yesterday was Mother's Day and I told the kids that I wanted to grill out. Eli brought his grill over. We fired it up and made chicken drumsticks, baked potatoes,cucumber salad and Shish Kabob. It was such a delicious meal and cooked up so quickly!


The Shish Kabob is actually a recipe that my mother used to make. It's super easy and very tasty! You can use whatever vegetables that you like. Mushrooms are great this way! Substitute chicken for beef, tofu tastes great with this marinade too!

1-1 1/2 LBS Stew Meat
1- 20 Ounce Can Pineapple Chunks
1 C Italian Salad Dressing



2 Roma Tomatoes, Cut into Chunks
1/2 Red Onion, Cut into Chunks
1 Green Pepper, Cut into Chunks

15 Wooden Skewers

In a gallon size zipper bag mix salad dressing, pineapple and meat.

Let marinate 4 to 6 hours. Try not to go longer than 6 hours because the pineapple juice will begin cooking the meat.

While meat is marinating chop vegetables and soak skewers in water to prevent burning.

Place meat, fruit and vegetable on Skewers in any order that pleases you.

Grill for about 10 minutes per side. Let rest for 10 minutes. Serve and enjoy!
