Pork Tacos

Do you ever have one of those days where you take something out of the freezer to thaw for dinner but have no idea what you are going to make? Yeah, that was me yesterday. I took out a pound of center cut boneless pork chops and then texted back and forth with my daughter, what do you want? I don't know, what do you want? You get it!


The dry rub for the chicken was so delicious I started thinking about doing the same thing with the pork. Then I thought,what if I cut the pork into cubes and then use the rub! That would make some awesome tacos! And it did! You are going to love these tacos. So much flavor!

Pork Onions and Green Peppers

Dry Rub 
1 TSP Kosher Salt
1/2 TSP Black Pepper
1/2 TSP Cayenne
1 TSP Garlic Powder
1 TSP Onion Powder
1 TSP Oregano
1 TSP Cumin

2 TBSP Olive Oil
1 LB Center Cut Boneless Pork Chops, Cubed
1/2 Red Onion, Sliced
1/2 Green Pepper, Sliced

Corn Tortillas

Pork in Dry Rub

Whisk together spices for rub in a medium mixing bowl.

Add pork cubes and stir to combine.

Preheat large frying pan over medium heat.

Add Olive and saute pork until it begins to brown.

Once pork is brown add onion and green pepper and saute until tender crisp.

Pork and Vegetables

Heat corn tortillas in microwave for 30 seconds.

Serve with beans, rice and your favorite taco toppings. Enjoy!
