It's grilling season but it's not. The weather has been warming up nicely. We were in the 60s yesterday and expect to be in the high 80s by the weekend. We grilled for Mother's Day but it's been way too windy to grill at all lately.
I'm one of THOSE people who believes that using gas to grill is not really grilling. It's cooking with gas! Charcoal is the way! Charcoal has its limitations. I won't grill in high winds because of the risk of sparks traveling and starting a fire. Instead of grilling our dinner last night I decided to use the flavors of the grill and just bake my drumsticks in the oven. Guess what? It turned out great! So much flavor and the chicken was so juicy and delicious! You're going to love this recipe and you can use it in the oven or on the grill. It's perfect for chicken or pork. It all starts with the spice rub.
1/4 C Brown Sugar
1 TSP Kosher Salt
1 TBSP Garlic Powder
1 TBSP Onion Powder
1 TBSP Old Bay
1 TBSP Paprika
1 TSP Cayenne*
1 TSP Black Pepper
Mix rub ingredients together in small mixing bowl.
Package of 8 Drumsticks**
Cover cookie sheet with foil and spray with cooking spray.
Place drumsticks on cookie sheets. Sprinkle with rub.
Bake in 425 degree oven for 35 minutes.
Serve and enjoy!
* Use more or less cayenne. It just depends on spicy you like it.
**Also great on chicken breasts and thighs.
