A Bolognese is a sauce that originated in the Bologna region of Italy. It's one of my favorite sauces. The longer you cook a Bolognese Sauce the better it tastes. The flavors mellow and come together. It's heaven in a pot. However, it is possible to make a sauce that tastes like it has cooked all day when in fact it's only been 30 minutes!
You can remove the casing from the sausage and cook it like ground beef or you can cook the sausages whole and slice them up to add to the sauce. I like either way. I just felt like whole sausage this time around.
1 Package Sweet Italian Sausage, Cooked
2 TBSP Olive Oil
1/2 Red Onion, Chopped
1/2 Green Pepper, Chopped
4 Garlic Cloves, Minced
2 Roma Tomatoes, Chopped
4 Sprigs Fresh Thyme, Leaves Removed
1 TSP Oregano
1/2 C Red Wine
2 - 8 ounce Cans Tomato Sauce
1/4 C Parmesan Cheese, Grated
1/2 TSP Beef Base
1 TBSP Red Wine Vinegar
Kosher Salt & Pepper
Pre-heat a large frying pan over medium heat.
Add olive oil and vegetable.
Saute until tomatoes begin to break down.
Add oregano, thyme, salt and pepper and beef base.
Stir in sausage.
Pour in red wine, tomato sauce, Parmesan cheese and beef base.
Simmer for 15 Minutes.
Stir in red wine vinegar just before serving.
Serve over your favorite pasta and enjoy!
