I love lamb. I remember when my mother would make lamb chops.She would serve them with buttered Creamette macaroni and peas. Just before the lamb chops were finished frying she would squeeze lemon juice over them. It was one of my favorite meals.
These days lamb is pretty expensive and I don't buy it unless I find a great deal on it. Guess who found a great deal? This was one of those can not pass up deals. Lamb is perfect for a special occasion it's also perfect for a Passover Seder!
The lemon is the most important part of the dish. Lamb is very fatty and rich and the lemon cuts right through that.
1 - 4 to 5 LB Leg of Lamb
1 TBSP Olive Oil
4 Garlic Cloves,Crushed
1 Lemon, Zested and Juiced
1 TSP Kosher Salt
Combine oil, garlic,salt and lemon zest.
Rub mixture all over lamb.
Pour Lemon Juice over lamb.
Cook in slowcooker for 4 hours.
Remove lamb and let rest for 15 minutes before serving.
Use the Jus! You can thicken it with cornstarch for gravy or use as is. It's delicious!
