One of my favorite leftovers in the whole world is leftover lamb. There are so many things that you can do with it. Sometimes I slice it up some onions, cucumbers and tomatoes, serve it on gluten free flat bread and make up some tzatziki sauce. This time I chose to make Shepherd's Pie. Total comfort food! Many people make this with ground lamb or ground beef, but I prefer mine chunky. Leftover Leg of Lamb is perfect for this hearty and comforting dish.
This is a wonderful dish for lunch or dinner on the second night of Passover. If using for Passover make sure that you use ingredients that are Kosher for Passover.
