Shepherd's Pie

One of my favorite leftovers in the whole world is leftover lamb. There are so many things that you can do with it. Sometimes I slice it up some onions,cucumbers and tomatoes,serve it on gluten free flat bread and make up some tzatziki sauce. This time I chose to make Shepherd's Pie. Total comfort food!  Many people make this with ground lamb or ground beef, but I prefer mine chunky. Leftover Leg of Lamb is perfect for this hearty and comforting dish.

This is a wonderful dish for lunch or dinner on the second night of Passover. If using for Passover make sure that you use ingredients that are Kosher for Passover.

Shepherd's Pie

1 TBSP Olive Oil
1 1/2 C Leftover Leg of Lamb, Chopped
1/2 Onion, Chopped
2 Garlic Cloves, Crushed
1 1/2 C Green Beans*
1 - 8 Ounce Can Tomato Sauce
2 C Mashed Potatoes
Kosher Salt & Black Pepper

Preheat oven to 350 degrees.

Heat a large frying pan over medium heat. Add olive oil.

Saute Onions until they turn translucent. Add garlic and cook for one minute.

Add lamb, green beans and tomato sauce. Season with salt& pepper to taste.

Spray a 9.5 inch glass pie plate with cooking spray. Pour contents of frying pan into pie plate.

Spread mashed potatoes over the lamb and tomato sauce.

Bake for 30 minutes. Remove from oven and let rest for 10 minutes. Serve and enjoy!

*Use any vegetables that you have on hand. Many people like to use peas and carrots. It's all about personal preference.
