I am so sad. This is the last meal I made in my slowcooker. It cracked and bit the dust. I got about 3 years of heavy duty use out of it so I can't really complain but I will miss it and I need to get a new one VERY soon as I use it at least 3 times a week. I am taking suggestions on which one I should get.
On top of losing my slowcooker, I have been feeling really awful this week. The colitis is back in full force. Add to that the constantly fluctuating barometric pressure from all of the storms moving through the region and I have had a rough week and it's not even close to being over! But we still have to eat which is why I love slowcooker recipes so much. Dump and go!
1 - 20 Ounce Can Crushed Pineapple
1/2 Red Onion, Chopped
1/2 Red Pepper, Chopped
1/4 C Brown Sugar
1/4 C Honey
1/4 C Gluten Free Soy Sauce
2 TBSP Worcestershire Sauce
2 Garlic Cloves, Crushed
2 TBSP Pickled Sushi Ginger, Minced
1 TSP Kosher Salt
4 Boneless Skinless Chicken Breasts
Mix together everything except chicken.
Pour half mixture into slowcooker.
Put chicken into slowcooker and cover with remaining sauce.
Cook for 6 to 8 hours.
Shred Chicken and serve over rice.
