When I was a little girl a Passover snack meant a piece of matzo with cream cheese and jelly, a macaroon or a couple of jellied fruit slices or a piece of real fruit. Not too many options. Even six years ago when we went gluten free there were even less options for a Passover snack much less a gluten free Passover.
Times have changed. The number of people diagnosed with Celiac or Non-Celiac gluten sensitivity has risen to an extent that gluten free products are in every store and Manischewitz has created many that are not only gluten free but Kosher for Passover!
Manischewitz now offers a gluten free, Kosher for Passover cereal called Magic Max's Vanilla Crunch Puffs (also available in chocolate). The minute I saw them I thought, Marshmallow Bars for sure. And yes! Manischewitz does indeed make marshmallows that are Kosher for Passover!
1 1/2 TBSP Margerine
1 Package Manischewitz Kosher for Passover Marshmallows
Spray an 8 inch square baking pan with cooking spray.
Melt margerine and marshmallows in microwave for 30 to 45 seconds. Stir.
Fold cereal into marshmallow mixture.
Spoon cereal into prepared pan and chill in refrigerator for 30 minutes.
Cut into bars. Serve and enjoy!
