Salisbury Steaks

Salisbury Steak with Gravy

Certain foods bring back strong memories of childhood. At Thanksgiving it's the stuffing. At Passover it's the Matzo Brei. When I am sick it's chicken soup. During the week on a cold evening it's Salisbury Steaks.


When I was a little girl, my mother was working on her BSN (Bachelor's of Science in Nursing). She had classes at night so some nights she had no time to cook. On some of those nights she would pick up a package of frozen Salisbury Steaks and serve them with elbow macaroni and a vegetable. I loved those nights. I loved frozen Salisbury Steaks and I LOVED that gravy. 

Fast forward 40 years. We no longer use convenience foods like Salisbury Steaks because of Ryan's food allergies. We make everything from scratch. I still LOVE Salisbury Steaks and I still love that gravy!

Steaks

1 LB Ground Beef (I use 80/20)
1/4 Onion, Minced
3 Garlic Cloves, Crushed
1/4 C Heavy Cream
Salt & Pepper


Ground Beef Mixture for Salisbury Steaks

Mix together all of the above ingredients. Form into 4 patties.

Ground Beef Patties for Salisbury Steaks


I like to make my patties oblong. Note, if you are using a lean ground beef mix you will need to heat a tablespoon of olive oil in a large frying pan before adding beef patties. If you are using an 80/20 mix then you do not need to add the extra oil, just make sure the pan is hot before adding the patties. Cook each side for 7 to 10 minutes depending on your preference for doneness.

Gravy

1/4 Onion, Sliced
2 TBSP Gluten Free Flour (I use Better Batter)
1- 14.5 oz Can Beef Broth
1/2 C Heavy Cream
1 TBSP Worcestershire Sauce
1 TSP Garlic Powder
1 TSP Onion Powder
Salt & Pepper

Once the patties are brown on the first side, flip them. Add the sliced onions to the pan to soften.

Once the patties are cooked, remove from heat.

Stir the flour into the fan remaining in the pan. Whisk until absorbed and brown.

Add beef broth and whisk until the sauce begins to thicken. Add cream and remaining seasonings. 

Return patties to the pan. Serve over mashed potatoes or pasta. Enjoy!

Note: This is delicious with mushrooms. If using mushrooms add to the pan with the sliced onions.
