What absolutely crazy weather we are having. We were in the high 70s over the weekend. All of our windows were open. We spent a lot of time outside playing with Norm our Great Dane. It feels like we've skipped winter this year. There were so few days that I actually had to wear a warm coat and snow? We've had very little snow in South Dakota. We are at extreme fire danger because of the lack of snow. I am crossing my fingers for a Spring blizzard. Crazy, right?
When the weather gets warm I crave pasta salad. Pasta salad says summer to me. This pasta salad has a bright and lemony dressing that will instantly remind you of summer. So delicious! The beautiful thing about pasta salad is that you can include any veggies that you have on hand.
2 C Mayonnaise
1 Lemon, Zested and Juiced
1 TBSP Garlic Gold Nuggets
2 Sprigs of Thyme, Leaves Removed
1 TSP Kosher Salt
1 TSP Black Pepper
1 Pkg Gluten Free Macaroni
1 Bunch of Broccoli, Separated
1/2 Red Onion, Chopped
1/2 Red Pepper, Chopped
1 Bunch of Radishes, Quartered
4 OZ Cheddar Cheese, Cubed
20 Pepperoni Slices, Quartered
Early in the day, in a medium mixing bowl, Combine all dressing ingredients and refrigerate for at least 4 hours.
Prepare Macaroni according to package directions, drain and cool.
In a large mixing bowl, combine salad ingredients and mix until evenly distributed. Add dressing and mix until evenly distributed throughout salad. Refrigerate until served. Enjoy!
