Corned Beef is on sale this week! I picked up 3 packages at my local Safeway for an unbelievable price. It's the perfect time to stock up! Make one this week and save the rest for a time you are craving corned beef.
Normally I throw the corned beef brisket in the slowcooker with a bottle of gluten free beer and just let it go. Guess who is out of beer? And the store was completely out when I went! I decided to come up with something a little different. This recipe has all the flavors of a corned beef sandwich from my childhood. New York Deli Mustard and Garlic, a perfect combination. You won't believe how easy this recipe is!
1 C Water
2 LBS (or more) Corned Beef Brisket
Spice Packet from Brisket
1/2 C Grainy New York Deli Mustard
8 Garlic Cloves, Crushed
Pour water into slowcooker.
Place brisket into slowcooker fat side up.
Sprinkle spices from packet over the top of the corned beef.
Spread mustard all over the top of the corned beef.
Sprinkle crushed garlic over mustard.
Cook for 6 hours.
Using tongs, remove corned beef from slowcooker and let rest 15 minutes. Letting it rest allows the juices to settle and gives you beautiful slices instead of just strings of meat.
Serve with Colcannon and enjoy!
