Just about every Saturday morning you will find me at The Black Hills Farmer's Market. I love it there and I definitely have my favorite vendors and Dale from Spearfish always seems to have just what I am looking for! He has the BEST tomatoes in the region. Tomatoes are the basis for my delicious Sausage Ratatouille and when I received the Veggetti® I thought what a great addition this will be to my Ratatouille!
I LOVE the whole idea of the Veggetti®. It turns delicious vegetables into a healthier spaghetti. It lowers the calorie count of your favorite pasta dishes, it makes delicious gluten free dishes! There are so many reasons why I love this. Think of all of the vegetables you can turn into a fun, colorful and delicious spaghetti. I used summer squash but you can use anything! It's very easy to use and has stainless steel blades and cleans up quickly in the dishwasher.

You can do this dish with anything you like. I chose Roma Tomatoes and Summer Squash as my base. Get the kids involved and I bet they will eat every bite! I also used Sweet Italian Sausage but if your family prefers hot or mild, go for it!
1 LB Sweet Italian Sausage, Cooked according to package directions
1 LB Summer Squash, made into spaghetti using the Veggetti®
1 LB Roma Tomatoes, Chopped
1 Red Pepper, Chopped
1/2 Red Onion, Chopped
2 Garlic Cloves, Crushed
1 TBSP Fresh Basil, chopped
1 TBSP Fresh Oregano, Chopped
1 TBSP Fresh Chives, Chopped
1 TBSP Fresh Parsley, Chopped
1 TBSP Olive Oil
Salt & Pepper to taste
Parmesan Cheese to garnish
Preheat frying pan over medium heat and add olive oil. Place tomatoes and squash into hot oil. Once tomatoes being to soften add the red pepper, onion, herbs and salt and pepper. Cook over medium heat until soft. Add cooked sausage and crushed garlic and cook until heated through. Serve with Parmesan cheese. Enjoy!
