Summer Tiramisu Cake #FreshFruitBowl and Giveaway

My mission this month was to create something delicious using the new Pro Freshionals Fresh Fruit Bowl. This 3 piece bowl is available exclusively at Bed Bath and Beyond. This bowl was the perfect kitchen tool to help make this delicious cake. The 3 piece set includes a large bowl, colander and lid. I love mine and I know that you will love it too!

Doesn't that look delicious? Believe me, it is and it's very easy to make!

1 LB Strawberries, Sliced
1/2 LB Blueberries
Juice and Zest of 1 Lemon
1/3 C Sugar
1 Yellow Cake Mix, Prepared according to package instructions (I used gluten free)
3 Eggs
1/2 C Sugar
2 C Mascarpone

The night before serving bake the yellow cake according to package directions. In Colander of Fruit Bowl add the berries, lemon juice and zest, and 1/3 cup of sugar. Refrigerate over night with Colander in the bowl. Cover with lid.

Beat eggs with 1/2 cup sugar until thick and creamy. Over double boiler continue to whisk eggs until thick and coats the back of the spoon. Remove from heat and use mixer to beat until temperature of custard cools down. Add mascarpone and continue beating with mixer until combined. Chill for 1 hour.

Split Yellow cake in half. Soak the bottom half of the cake with the juices from the berries. Cover with half of the custard and half of the berries. Add top and repeat with custard and berries. Chill in refrigerator at least 1 hour before serving.
