Man, was that a LOOONG winter or what? One of the first signs of Spring in South Dakota was the appearance of strawberries at my local grocery store. Hello Spring! We missed you!
We ran to the store to pick up 2 LBS of strawberries. Yes, I DO LOVE my strawberries! LOL! Strawberries with a little Reddi-Wip on top is one of my favorite snacks.
Did you know that 1 tablespoon of Reddi-Wip is only 15 calories? And is you are using the Fat Free Reddi-Wip it's only 5 calories! That's some guilt free snacking! But my favorite way to serve strawberries is wrapped inside some delicious and easy to make crepes!
1 C Gluten Free All Purpose Flour
3 C Milk (almond milk also works great)
1 TBSP Sugar
1 TSP Vanilla
Mix together all ingredients using a blender or mixer. Pre-heat a small non-stick frying pan. pour 1/4 cup of batter into center of pan and swirl to coat the bottom of the pan. Cook about 2 minutes until browned on bottom and dry on top. Remove from pan and repeat. Makes approximately 30 crepes.
Stuff crepes with strawberries and garnish with Reddi-Wip.
