Mini Lemon Loaves

This month I received the 4 Cup Mini Loaf Pan and Snowflake Parchment Paper from Good Cook. Perfect timing as I was ready to start my holiday baking!


Holiday baking at my house means baking for an army!I bake cookies and bars and make fudge. This year I started my baking with mini lemon loaves which I gave as a Thanksgiving gift. These loaves do not last very long in my house and I know they won't last long in yours! You can make these loaves using any type of citrus.

Mini Lemon Loaves


3 C Gluten Free All Purpose Flour
1 TSP Baking Powder
1 TSP Baking Soda
1 TSP Salt
6 Eggs
2 C Sugar
4 TBSP Butter, Melted
1/2 C Oil
2 Lemons, Zested and Juiced

Preheat oven to 350 degrees. Spray or butter 4 Cup Mini Loaf Pan.

In medium bowl whisk together flour, baking powder, baking soda and salt. In a large bowl, whisk together remaining ingredients. Stir flour into wet ingredients in 3 batches. 

Pour batter into loaf pan. Bake at 350 degrees for 20 minutes.

Remove from pan while hot and pour glaze over loaves.

Glaze

1 C Powdered Sugar
1 Lemon Juiced and Zested
2 TBSP Milk

Mix together until desired consistency.
