Good Cook Thanksgiving Leftovers #21: Turkey & Potato Gratin

I had an awesome Thanksgiving! My daughter did most of the work (with plenty of input from me!) and everything tasted great. Even more so than the turkey, I think we look forward to the leftovers. We have our favorites that we must have every year, like Turkey Pot Pie and Turkey Tetrazzini, but I like to also come up with a new recipe each year as well. This year it is Turkey & Potato Gratin and this recipe is so quick and easy to put together you will wonder why you aren't doing this with all of your leftovers!



4 Baked Potatoes, Sliced
1/2 Small Red Onion, Sliced
2 C Cooked Turkey, Cubed
1 C Parmesan, Grated
1 C Mozzarella, Shredded
1/2 C Heavy Cream
Salt & Pepper

Preheat oven to 350 degrees. Spray 2 QT Ceramic Baking Dish. Place a layer of potato slices on bottom of ceramic dish. Cover with 1/2 of onion and 1/2 of turkey. Sprinkle with 1/2 Parmesan cheese and salt & pepper to taste. Add another layer of potatoes and continue layering remaining ingredients. Sprinkle Mozzarella on top and then pour heavy cream over everything. Bake for 30 minutes or until cheese begins to brown.
