I was at Walmart earlier this week and I noticed that Star Fine Foods has some new olive oils. Each of these olive oils is crafted to pair perfectly with beef/lamb, poultry fish, or vegetables.
The Arbequina Olive Oil for Vegetables is made from the Arbequina Olive which has a smooth slightly almond flavor with touches of green apple. It pairs perfectly with salads or other vegetables.
The Hojiblanca Olive Oil for Poultry/Fish is made from the Hojiblanca Olive which has a smooth and fruity taste that does not overpower poultry and fish.
The Picual Olive Oil for Beef/Lamb is made from the Picual Olive which has a bite to it with a peppery finish which makes it pair perfectly with Beef and Lamb.
I chose the Picual Olive Oil for Beef/Lamb because I picked up a rack of lamb on clearance a few weeks ago. I love finding great deals on expensive cuts of meat!
1 Rack of Lamb
1 Cilantro Bunch, Chopped
1 Lemon, Zested and Juiced
4 Garlic Cloves, mashed
1 TSP Kosher Salt
2 TBSP Star Picual Olive Oil for Beef/Lamb
Preheat oven to 400 degrees.
In baking pan, mix together all ingredients (except for lamb). Coat lamb rack with olive oil, herb mixture. Roast at 400 degrees for 15 minutes. Remove lamb from oven and broil for another 5 minutes. Let lamb rest 15 minutes before serving.
Cut between ribs and serve 2 chops per person.
