Mini Toffee Cheesecakes

It's the day after Halloween and you know what that means? Holiday season is upon us! It seems to happen earlier and earlier every year. Who knows, maybe next year we will be discussing this on July 5th! Holiday season means coming up with gift ideas and sweet treats for entertaining. These Mini Toffee Cheesecakes are perfect for both!
I used a jumbo muffin pan, but you can use regular size or even mini muffin pans. This also works in a 9 inch springform pan.

3- 8 ounce Packages of Cream Cheese, Softened
1 Can Sweetened Condensed Milk
3 Eggs
2 TBSP Sobieski Karamel Vodka
1/2 C Toffee Bits

1 1/2 C Ground Pecans
3 TBSP Butter, Melted
3 TBSP Brown Sugar

Preheat oven to 300 degrees. Place paper or aluminum cupcake liners in the pan. (If using springform pan then use parchment paper on the bottom.)

Mix melted butter with brown sugar and then mix in ground pecans. Press 2 TBSP of mixture into bottom of cupcake liners. Bake for 5 minutes. Remove from oven and let cool.

Combine cream cheese, sweetened condensed milk, eggs and vodka. Mix until combined. Fold in toffee bits. Fill each cupcake liner 2/3 full. Bake for 30 minutes. (If using springform pan then bake for 50 minutes. 

Remove from oven, chill and serve!
