Gluten Free Mini Pizzas

My mission is to take the above Good Cook items and make something out of the box with them. We have a large cookie sheet, cookie cutters and squeeze bottles. I chose gluten free mini pizzas. You are going to love this new dough recipe!

Gluten Free Mini Pizzas


3 C All Purpose Gluten Free Flour
2 TSP Baking Powder
1 TSP Kosher Salt
1/2 TSP Garlic Powder
1/2 TSP Basil
1/2 TSP Oregano
1/2 C Parmesan, Grated
1/2 C Mozzarella, Shredded
2 C Plain Greek Yogurt

Preheat oven to 350 degrees.

Mix together flour, spices and herbs in food processor. Process for 30 seconds. Add cheeses and process for another 30 seconds. Add yogurt and process until the dough comes together into a ball.

Line cookie sheet with parchment paper. Spread dough on cookie sheet using your hands. It works best if you oil your hands first.

Bake dough on cookie sheet for 15 minutes.

Using cookie cutters cut dough into shapes and place back on parchment covered cookie sheet.

Spread sauce (recipe to follow) and add your favorite toppings. I used red onions, green pepper, bacon and sauteed chicken. Then I topped with Mozzarella cheese.

Bake mini pizzas for another 10 minutes.


4 TBSP Butter, cut into chunks
1/2 TSP Garlic Powder
1/2 TSP Oregano

Place all ingredients into squeeze bottle and microwave until butter is melted, about 30 seconds.
