Garlic Meatloaf

It's getting cold at night in South Dakota and can you believe that our first snow storm is expected this Friday! Yes, I said snow! It was in the 80's yesterday and our first snow storm of the year will be here on Friday. I am ok with this. I am ready. The weather change means it is time to change up our dinner menu. Time to bring back soups, stews, chili and my personal favorite, meat loaf!


I have never had a meatloaf that I didn't like! I have heard people complain about hard slabs of meatloaf that you can use as a door stop, but not my meatloaf. My meatloaf is a moist and full of flavor and makes great sandwiches the next day!

2 LBs 80/20 Ground Beef
1/2 Red Onion, Chopped
3 Cloves Fresh or Frozen Chopped Garlic
1 TBSP Gluten Free Tamari Sauce
1/2 C Parmesan Cheese, Grated
1 TSP Kosher Salt
1 TSP Black Pepper
3 Strips of Bacon, Chopped in Half

Preheat oven to 350 degrees. Combine first 7 ingredients. Knead together with your hands until mixed. Place meat in a glass baking dish and form into a loaf.


Garlic Meatloaf

Layer the bacon slices over the meatloaf. Bake in 350 degree oven for 1 hour. Internal temperature should be 160 degrees. Enjoy!
