Way back when, in the days of old, I would go to breakfast every Sunday morning at a little Greek restaurant not far from my apartment in Chicago. I had the same thing every Sunday, a Zucchini and Feta Cheese Omelette. It was delicious. There is something about the combination of sweet zucchini combined with brininess of the Feta, delicious and satisfying. Then I thought, why not take those flavors and stuff them into a lamb burger? So I did just that!
I recently had the opportunity to try out the Stuffed Burger Press from Good Cook. I have tried making stuffed burgers in the past but they always fell apart while cooking so I was excited to give this a try. The Stuffed Burger Press made it so easy to make these burgers.
I assembled my ingredients, pressed the meat into the bottom of the press, added my stuffing ingredients and then sealed the burgers. Fast, easy and fun to do with the kids!
The burgers then cooked up beautifully on my Cast Iron Grill Pan from Good Cook. Cast Iron is so easy to not only cook with but care for as well. Before using I spread a light coating of corn oil all over the pan and then laid it upside down on a cookie sheet in a 450 degree oven for 90 minutes. Then left it in there to cool over night. It was like cooking burgers on a non-stick pan. They came out perfect!

Make this Zucchini and Feta Stuffed Lamb Burger
1 LB Ground Lamb
1 Medium Zucchini, Sliced
1 TBSP Butter
1 Lemon, Zested and Juiced
1 Garlic Glove, Minced
1/4 C Fresh Cilantro, Chopped
4 TBSP Feta, Crumbled
Saute zucchini in butter until it begins to brown. Set aside and allow to cool.
Mix ground lamb with lemon zest and juice, garlic, cilantro. Use salt and pepper to taste.
Place ground lamb into burger press until it reaches first line. Press down. Layer first the zucchini and then 2 TBSP Feta. Add ground lamb on top and then use press to seal. Do this again with remaining meat to make second burger.
Cook in hot grill pan 6 minutes each side.
Serve with Yogurt Sauce.
1 C Plain Greek Yogurt
1 TSP Granulated Garlic
1/2 Lemon, Zested and Juiced
Mix ingredients together and chill for 1 hour before serving.
