During my trip to the farmer's market last week I picked up some large zucchini at a great price. If you have zucchini in your garden and want to give me some, I will gladly take them! ;) The first thing I made was Zucchini Pecan Bread and that was delicious! Next up on the menu was Stuffed Zucchini. 
Ryan is not a big fan of zucchini. So when I told her what I was making for dinner she was not thrilled with the idea. I kept telling her she would like this, but she didn't believe me... That is until she tasted it! She loved it! She describes it as French Bread Pizza but with zucchini instead of bread.  I hope your family likes this as much as my family did.

2 large zucchini
1 LB Sweet Italian Sausage
1 Small Onion, Chopped
1 Garlic Clove, crushed
1 8 oz Can Tomato Sauce
1/2 C Grated Parmesan
1 C Grated Mozzarella

Preheat oven to 350 degrees. Grease glass baking dish.

Hollowed out Zucchini

Slice zucchini in half long ways. Using a spoon scoop out the middle of the zucchini. Chop the zucchini that you scooped from the middle and reserve for stuffing.

Brown Sausage

Remove sausage from casing and brown in non-stick skillet. Once sausage begins to brown add onions and reserved zucchini. Once onions turn translucent add garlic and cook for 1 minute.

Add tomato sauce and Parmesan cheese to meat and mix together. Remove from heat.

Stuffed Zucchini

Spoon sausage mixture into zucchini and cover with grated Mozzarella. Bake in 350 degree oven for 40 minutes.
