Can you believe that summer is almost over? It's going to be 107 degrees here today so it's hard to imagine that winter is just around the corner, but it's coming! And cold & flu season is not far off either.

Enchiladas are one of those feel good comfort dishes. There is nothing more satisfying than sitting down to a Creamy Chicken Enchilada Dinner! Thanks again to Rudi's Gluten Free Tortillas. This is a great dish to make with rotisserie chicken or you can use leftover chicken that you have hanging out in your fridge.

IMUSA 7.5 QT Pressure Cooker-Giveaway

I have really been enjoying my new pressure cooker. Tonight, I made an absolutely delicious pot roast. I still cannot get over how easy the pressure cooker is to use!

Yesterday I told you about Rudi's new Gluten Free Tortillas. Guess what I did with them! I made Chimichangas! I have to tell you that these were so yummy and had a satisfying crunch to them. Oh yes, we have missed Chimichangas!

Gluten Free Tortilla Rollups

I am always amazed (and grateful) when I find a great tasting gluten free product. Rudi's Gluten Free Bakery has done it again! They have 3 great tasting gluten free tortillas; Plain, Spinach and Fiesta.

I received this awesome Pressure Cooker from IMUSA. I wanted to use it to make some comfort food. Chicken & Rice is my comfort food. It is so fast and delicious in the Pressure Cooker that this is the only way I will cook it from now on!

Have you heard the horror stories about pressure cookers exploding? I have. But the fact is that I don't know anyone this has happened to! Pressure cookers have a bad reputation because of these stories. These stories are why I have not used a pressure cooker before.

Dreamworks Lincoln

I am a history buff and very excited for the opening of Dreamwork's Lincoln, starring Daniel Day-Lewis, on November 16th!

I love honey! I use it when I cook, when I bake, in my tea and sometimes I just grab a spoonful to "taste". You all know what a taste is right? It's when you sneak a spoonful of something when nobody is looking! Yeah, that's me and honey.

Today is truly the end of an era with the death of Phyllis Diller. I grew up watching Phyllis on The Ed Sullivan Show, Laugh In, Merv Griffin and a host of other programs. She always made me laugh. But more important than the laughter she also taught me a few things along the way.

Ryan works an 11 1/2 hour day on Saturdays and Sundays. I like to make sure that she has enough food to get her through the day. This is so important because she has periods of hypoglycemia if she forgets to eat (which she does quite often). I try to send her with enough food to last through her long day. This usually involves an assortment of bags and containers. Not the most environmentally friendly solution.

If you have been reading my blog for a while then you already know that I am having a love affair with Chebe Bread Mixes! Lifestyle changes are always difficult but when you have to eliminate major food groups from your diet it become a real challenge. Chebe bread mixes have allowed me to bring back many of the dishes that we had to give up and I am every so grateful for that.

I lived in and around Chicago for 20 years and deep dish pizza was a regular part of my diet. It's a hard thing to give up when you've gone gluten free but I have a gluten free replacement and it is awesome!

Fried Corn

We got some fresh picked corn from a friend yesterday. I made some of it up as fried corn. This is such a great way serve fresh corn it also works well with canned and frozen but it tastes the best when it is fresh from the cob. It is a fast, easy and delicious side dish.

Remember this HUGE head of cabbage that I got at the farmer's market last week? Well I wanted to make Cabbage Rolls but the cabbage did not cooperate! So I made UnStuffed Cabbage which is just as delicious but a lot less work. Now this makes a large amount, feel free to half the recipe or make the whole thing and freeze some, which is what I did. This cooks low and slow in a slow cooker and smells (and tastes) delicious!

I love jerky! Ryan loves jerky! Unfortunately the majority of jerky available today is NOT gluten free. Atleast that is what I thought until I found out about Krave Jerky. Eden Fantasys Review-And-Giveaway

I have seen reviews of Eden Fantasys on other web sites and I have to tell you that I was intrigued! I checked them out and I am pretty impressed!

It has been SOOO hot lately. I cannot remember a summer that had such relentless heat. Living without air conditioning for most of the summer means that I have not been cooking much. A very dear friend walked into my house a few weeks ago and then lent me the money to buy an air conditioner. I am cooking again! But I want to cook things that don't heat up the house. I have been using my slow cooker at least twice a week and sometimes more often. I am always on the lookout for new slow cooker recipes. I hope you will share some with me!
