My favorite part of summer is the grilling! One of the things I like to do is cook extra on the grill so that we have enough left over for meals for a couple of days. If you are looking for something easy and delicious try marinating boneless chicken breasts or thighs in Italian, Greek or Caesar Salad Dressing and then toss on the grill. Great with a salad, in a salad or as a sandwich!

I have this thing for cookware. I MUST have all manner of gadgets, pots and pans. The first time I saw the Bialetti Pasta Pot I knew I HAD to have it. I resent my colander. I find it bulky, difficult to store and even harder to clean. I WANTED A PASTA POT! Needless to say, I was beyond thrilled to get the chance to try one out. A little about Bialetti:

I have made a few pasta dishes in my pasta pot. I have also used it for potatoes! I figured if it's good for pasta it's good for potatoes and it is! Here is my recipe for Roasted Garlic Parmesan Mashed Potatoes.
4 Large Potatoes, Peeled and quartered
1 Bulb of Roasted Garlic
3 TBSP Butter
2 ounces Cream Cheese
3/4 C Grated Parmesan
Cook potatoes in Bialetti Pasta Pot. Drain water. Add the roasted garlic and start mashing the potatoes and garlic together. Add remaining ingredients and mix until smooth. Salt and pepper to taste. Enjoy!

I love Crunchmaster Crackers. I was so excited when I got the chance to try out their new Multi-Grain Crackers. There are three flavors; Sea Salt, Roasted Vegetable and White Cheddar. I honestly can't pick a favorite because I love all three! Each flavor tastes great by itself or with a topper. Try them with meat and cheese. Make a spread!
I made yummy Salami Spread. My friend Tim makes this incredible cream cheese spread with dried beef. I decided to change it up a bit. I hope you enjoy it!
1 pkg Cream Cheese, softened
10 slices Hard Salami, diced
1/4 Red Onion, minced
2 TSP Granulated Garlic
Mix together. Refrigerate at least 4 hours or overnight. Serve with your favorite Crunchmaster Cracker.

Since ancient times, stories of epic battles and mystical legends have been passed through the generations across the rugged and mysterious Highlands of Scotland. Chimpanzee opened in theaters nationwide this past weekend. Have you seen it yet? I have not, but I want to. I hear it is a wonderful movie and that all ages are moved by it. It has a great story and the scenery is gorgeous. Opening weekend Disney donated $1.00 from each ticket sold to the Jane Goodall Institute. Disney has extended this until May 3rd. So hurry out to see Chimpanzee and help save Chimpanzees!

I found this recipe for Peanut Butter and Jellies about a month ago. Then I received the MOST INCREDIBLE Peanut Butter to review and I thought that it would be perfect for this cookie. Of course I had to make a few changes to it. You know I can't leave well enough alone! Ryan and I made these and they are the most perfect Peanut Butter cookie ever because they were made with PB Crave.
1/2 C Butter
1/2 C Sugar
1/2 Brown Sugar
1/2 C PB Crave Razzle Dazzle
1 TSP Vanilla
1 1/2 C Gluten Free All Purpose Flour
1 TSP Baking Soda
1/2 Bag Mini Chocolate Chips
Seedless Raspberry Jam
Preheat oven to 350 degrees.
Using mixer, cream butter until fluffy. Add sugars, egg and vanilla. Once mixed add peanut butter. In a separate bowl, mix together flour and baking soda. Slowly add flour mixture to wet mixture. When batter is smooth, fold in Chocolate Chips.
Line cookie sheets with parchment paper. Roll dough into 1 inch balls, place on cookie sheet and add a thumbprint.
Fill each thumbprint with raspberry jelly.
Bake for about 15 minutes. I would advise not putting them as close together as I did! Enjoy

Season 5 of Chuck will be out on DVD May 8th. This was one of my favorite shows and I was so sad that it came to an end. I can't wait for the final season to come out on DVD.
In Season 5 , Episode 3 Morgan is experiencing problems because of the intersect. He has become completely obnoxious! Sometimes power will change a person. I have seen this first hand. I have seen people who I thought were friends get a promotion and become a completely different person. It makes you wonder if the friendship was real in the first place. I am sure Chuck and the gang had similar thoughts as well.

I am so excited about Marvel's Avenger's coming to theaters on May 4th! I find it hard to pick a favorite character but I don't have to because they will all be together! I am thrilled to offer you these video clips!

I love fish! I will make prepare fish any time I can. This time I made a Parm Crusted Cod Fillet that was delicious. It is crunchy and salty and the fish comes out moist, flaky and delicious! This recipe will also work well with tilapia, flounder, or any other white fish.
2 Fish Fillets
2 TBSP Water
1C Almond Flour
1C Grated Parmesan
1/2 TSP Salt
1 TSP Garlic Powder
1/2 TSP Black Pepper
1 TBSP Olive Oil
1 TBSP Butter
Mix almond flour, parm and seasonings together and put on a plate.Pour corn starch onto another plate. Mix egg and water together in a bowl. Dredge fish in the corn starch, followed by the egg wash and then the flour/cheese mix. Fry in Olive oil and butter until brown on both sides. Enjoy!
I love cookies. What I love even more is finding a gluten free cookie that doesn't taste gluten free. That's what I found with Dr. Lucy's Cookies. I was excited to get the chance to review these cookies. I have seen them in various stores around town but had never tried them before.
Dr. Lucy is a mom just like me who had a child with food allergies. She developed this recipe for her child and it has turned into a major business!

Ginger Snap: I love ginger. I am addicted to all things ginger. These are crunchy and spicy and completely delicious!
Chocolate: This is a crunchy chocolate cookie and this was my daughter's favorite. They would be great as a cheesecake crust. We will definitely be getting more of these!
Maple Bliss: These were my favorite. I hoovered these up in no time. These are not overwhelmingly sweet. They are just nice and mellow with a subtle caramel flavor. I can't wait to get more!
