Out of all the delicious fried goodness that you can get at a fast food restaurant onion rings are my favorite. There is something about the crispy, salty coating and the tender sweet onion that is perfection.I was surprised at how easy they are to make at home. I like using red onions but you can certainly use yellow, Vidalia or even white onions. This recipe works great with shallots too!
1 C Gluten Free Flour (you can use regular flour as well)
1/2 C Corn Starch
1 TBSP Kosher Salt
Oil for frying
Slice onions into rings. Place into a bowl and cover with milk. Let the onions sit in the milk for 30 minutes (this will take the bitter out of the onion as well as let the coating stick to the onion).
Mix together flour, corn starch, garlic powder and salt. Bring oil to 350 degrees. Remove the onions from the milk and dredge in the flour mixture. Fry until golden brown.
