Fish plays a big part in our meals. I love Tilapia, Salmon, Halibut... Ok, if it swims, I want to eat it. I used to do this with Catfish but that has gotten unbelievably expensive. I tend to stick with the cheaper seafood so Tilapia it is!
4 Tilapia Filets
1/2 C Lemon Juice
1 C Corn Meal
1/4 C Gluten Free Flour
1 TBSP Kosher Salt
1 TSP Black Pepper
1/2 TSP Garlic Powder
Oil for Frying
Pour enough oil into a frying pan so it is about 1 inch in depth. Heat oil to 350 degrees.
Mix together corn meal, flour, salt, pepper and garlic.
Dip filets in lemon juice and then dredge in corn meal mixture.
Fry in oil for about 4 minutes per side.
Blot on paper towel to remove excess oil.
