Loaded Mashed Potato Casserole

We have cool weather! I cannot tell you how excited I am. Cool weather means that I can use my oven and make some super yummy comfort food. I think that nothing is more comforting than Loaded Mashed Potato Casserole. It is easy to make and goes with just about anything. Make this one and I guarantee your family will want it again and again!

1 1/2 LBS Potatoes, Peeled & Chopped
1/2 TSP Salt
2 TBSP Butter
2 TBSP Cream Cheese
1/2 C Grated Parmesan Cheese
1 Egg
4 Bacon Strips, Crumbled
4 Green onions, Sliced
1 C Cheddar Cheese, Grated

Preheat oven to 350 degrees. Boil Potatoes until tender. Drain potatoes. Add salt, butter, cream cheese and Parmesan cheese to potatoes. Mash ingredients together. Add egg and mix. Fold in bacon and green onions. Spray baking dish with non-stick cooking spray. Place potatoes in baking dish and cover with Cheddar cheese. Bake in a 350 degree oven for 20 minutes.
