Gluten Free Tortilla Rollups


I am always amazed (and grateful) when I find a great tasting gluten free product. Rudi's Gluten Free Bakery has done it again! They have 3 great tasting gluten free tortillas; Plain, Spinach and Fiesta.

Prior to going gluten free we used flour tortillas a lot. Tortilla Rollups were a standard in my house. We ate them for lunch, as a snack and they were great appetizers for potlucks, parties and my daughter's wedding. They are quick, easy to make and the variations on the rollup theme are absolutely endless. Needless to say that this was the first recipe I tried when I received these wonderful tortillas!


The Rollups on the right were made with Rudi's Spinach Tortillas and the left were made with the plain tortillas.

1 8OZ PKG Cream Cheese
2 TBSP Lizzie's Kitchen Oh So Garlic (you can also use any type of dried garlic)
2 Green Onions, Chopped
4 Slices of Corned Beef
4 Pieces of Bacon, Cooked
4 Pickles, Sliced
2 Plain Tortillas
2 Spinach Tortillas

The night before (or a couple of hours ahead of time) mix together the cream cheese and garlic. Refrigerate.

Spread cream cheese on Tortillas. Sprinkle with chopped green onions. Layout Corned Beef Slices down the center of the Spinach Tortillas and the bacon down the center of the Plain Tortillas.

Lay pickles slices on the very edge of the tortilla and begin rolling. Roll as tightly as possible. You can either serve as is or chill for about an hour and slice.
