Gluten Free Chimichangas


Yesterday I told you about Rudi's new Gluten Free Tortillas. Guess what I did with them! I made Chimichangas! I have to tell you that these were so yummy and had a satisfying crunch to them. Oh yes, we have missed Chimichangas! 


1 LB Ground Beef (You can also use shredded Chicken)
1 Can Refried Beans
1 C Cooked Rice (I had some leftover from Chicken & Rice)
1 C Shredded Cheese (I used a Cheddar Jack Mix)
1 TSP Cumin
2 TSP Smoked Ancho Chile Powder
1/2 TSP Garlic
Salt
Black Pepper
Oil for frying 

Brown Ground Beef and add all of the seasonings to it. Salt & Pepper to taste. Heat oil (enough to cover bottom of pan).


In center of tortilla spread a layer of beans, then ground beef, rice and finish with cheese. Fold sides in. Seal the folds with a little of the beans. Place fold side down into oil and cook until brown. Flip to other side and cook until brown.

If you don't want to fry these you can also bake them in a 350 degree oven for 30 minutes.
