Gluten Free Chicago Style Deep Dish Pizza

I lived in and around Chicago for 20 years and deep dish pizza was a regular part of my diet. It's a hard thing to give up when you've gone gluten free but I have a gluten free replacement and it is awesome!
Chebe sent me a couple of boxes of their Focaccia Mix to try. This dough is fragrant with Rosemary and Basil and was the perfect base for our pizza.

1 Box Chebe Focaccia Mix
1/4 LB Sweet Italian Sausage
1/4 LB Pepperoni
1/4 Red Onion, Sliced
1/4 Green Pepper, Sliced
1/2 LB Mozzarella, Sliced
1/2 C Parmesan, Grated

8 OZ Can Tomato Sauce
1/2 C Red Wine
1/2 TSP Oregano
1/2 TSP Basil
1 TBSP Parmesan, Grated

Preheat oven to 375 Degrees. Spray a 8 or 9 inch cake pan with cooking spray. 
Break sausage up and saute in olive oil until brown. Drain and cool sausage. 
Prepare dough according to package directions and press dough into bottom and up sides of cake pan.

Layer sausage, onion and green pepper slices on the dough bottom. Cover with pepperoni.

Lay Mozzarella slices over the pepperoni. In a separate bowl mix together sauce ingredients and pour sauce over everything. Sprinkle sauce with Parmesan cheese.

Bake in 375 degree oven for 20 minutes. Let cool for 5 to 10 minutes and enjoy!
