We got some fresh picked corn from a friend yesterday. I made some of it up as fried corn. This is such a great way serve fresh corn it also works well with canned and frozen but it tastes the best when it is fresh from the cob. It is a fast, easy and delicious side dish.
3 Slices of Bacon, Cooked and Crumbled
1/4 Red Onion, Minced
1 Garlic Clove, Crushed
1 TSP Minced Parsley
2 TBSP Reserved Bacon Fat
1 TBSP Butter
1 TBSP Parmesan Cheese
Salt and Pepper to Taste
Cut the corn kernels off of the cob. Make sure you run your knife down the cob after removing the corn to squeeze the corn milk out. Add corn and onions to hot bacon fat. Saute until onion is soft and corn begins to brown. Add remaining ingredients and cook for 3 more minutes.
