When I lived in Illinois we had what I referred to as a mini-farm in the backyard. We had raspberry bushes, blueberry bushes and strawberries. Needless to say, I made a LOT of jam! But I made freezer jam because I found canning a bit intimidating. This year I was contacted by the great people at Ball to participate in National Can It Forward Day. All across the country people will be canning today. There are demonstrations and you can view these online all day today!
Ball sent me their Home Canning Discovery Kit which has everything you need to get started.
I started with their Mixed Berry Jam recipe. Unfortunately, when I took my raspberries out of the fridge they were moldy so I ended up making a One Berry Jam! But all is good. Ball has made this so easy that it came out great! I was surprised at how easy canning is and how little time it took. From start to finish the whole process took me about 1 1/2 hours.
I used:
1 LB Strawberries, crushed
3 TBSP Ball Real Fruit Classic Pectin
2 C Sugar
4 half pint Quilted Jelly Jars with lids and bands

Boiling water bath. I used a large Dutch Oven but any large pot will do.
Ready for eating!
Will I can again? You bet! I can't wait to try my hand at some blueberry jam, pickles and pickled green tomatoes. I am hooked!
