Roasted Garlic Parmesan Mashed Potatoes in My Bialetti Pasta Pot


I have this thing for cookware. I MUST have all manner of gadgets, pots and pans. The first time I saw the Bialetti Pasta Pot I knew I HAD to have it. I resent my colander. I find it bulky, difficult to store and even harder to clean. I WANTED A PASTA POT! Needless to say, I was beyond thrilled to get the chance to try one out. A little about Bialetti:

The Pasta Pot is oval shaped so that you can fit spaghetti or lasagna noodles in without breaking them (I love this). It holds 5 quarts and has this wonderful perforated lid that locks into place. All you have to do is remove from heat and drain! Easy!


I have made a few pasta dishes in my pasta pot. I have also used it for potatoes! I figured if it's good for pasta it's good for potatoes and it is! Here is my recipe for Roasted Garlic Parmesan Mashed Potatoes.

4 Large Potatoes, Peeled and quartered
1 Bulb of Roasted Garlic
3 TBSP Butter
2 ounces Cream Cheese
3/4 C Grated Parmesan
Salt
Pepper

Cook potatoes in Bialetti Pasta Pot. Drain water. Add the roasted garlic and start mashing the potatoes and garlic together. Add remaining ingredients and mix until smooth. Salt and pepper to taste. Enjoy!
