Gluten Free Parmesan Crusted Cod


I love fish! I will make prepare fish any time I can. This time I made a Parm Crusted Cod Fillet that was delicious. It is crunchy and salty and the fish comes out moist, flaky and delicious! This recipe will also work well with tilapia, flounder, or any other white fish.

2 Fish Fillets
Corn Starch
1 Egg
2 TBSP Water
1C Almond Flour
1C Grated Parmesan
1/2 TSP Salt
1 TSP Garlic Powder
1/2 TSP Black Pepper
1 TBSP Olive Oil
1 TBSP Butter

Mix almond flour, parm and seasonings together and put on a plate.Pour corn starch onto another plate. Mix egg and water together in a bowl. Dredge fish in the corn starch, followed by the egg wash and then the flour/cheese mix. Fry in Olive oil and butter until brown on both sides. Enjoy!
