Seafood Pot Pie

For those of you that read my last post know that I am serving seafood for St Patrick's Day this year. This time I made a Fish Pot Pie!

The beautiful thing about a pot pie is that the ingredients are not set in stone. For me it depends on what is in season and what I have around the house. Consider these merely suggestions!

12 oz Chilean Sea Bass, cubed
4 Green onions, chopped
1/4 lb Green Beans, chopped
1 Yellow Squash, chopped
2 Carrots, chopped
2 Garlic Cloves, crushed
12 oz Beer (I used gluten free)
3 TBSP Butter
3 TBSP Cream Cheese, room temperature
1 Lemon, zested and juiced
1 TBSP Chives, minced
Salt & Pepper

1/2 Recipe Cream Cheese Crust

Prepare the Cream Cheese Crust and chill in refrigerator for at least 30 minutes.

Melt butter and saute vegetables, garlic and lemon zest in butter until they begin to soften. Toss fish in lemon juice and add to vegetables in butter and remove from heat. Season with salt & pepper.

Bring beer to boil and reduce by half. Add cream cheese and whisk until smooth. Mix sauce with fish & vegetables and pour into ramekins. Roll out dough and cover ramekins. Place into a 350 degree oven for 30 minutes. Enjoy!
