Roasted Salmon & Leeks

Every year for St Patrick's Day I (like thousands of others) make corned beef and cabbage for dinner. I thought we might try something different this year! Ireland has a rich fishing industry and a booming restaurant scene. Why not try some fish dishes this year?

I decided to give Anderson Seafoods a call. They have a HUGE selection of fresh and frozen offerings. I placed my order and even though 3/4 of my state was closed due to a blizzard it arrived the next day! My order arrived in a box that was lined with a thermal material. Inside was a cooler and dry ice and my order. They also included 2 Ghirardelli chocolates. Nice touch!



I am so impressed with the Anderson Seafoods. The salmon that I received was beautiful and FRESH! I will never understand how they got such fresh tasting fish to me here in South Dakota. Incredible!

2 6-8 ounce Salmon Fillets
2 Leeks, cleaned and sliced in half lengthwise
2 TBSP Butter, cut into small cubes
1 Lemon, sliced
Kosher Salt

Spray baking dish with non-stick spray. Place leeks next to each other in bottom of pan. Dot each leek with a few of the butter cubes. Place fish on top of leeks.

Sprinkle salt over salmon. Dot with remaining butter and top with lemon slices.

Place into a 375 degree oven for 30 minutes.

Serve with Colcannon.
