Gluten Free Brownie Chocolate Chip Cheesecake

Ryan found this incredibly yummy recipe for a Brownie Cheesecake but it's not gluten free! So we made some gluten free brownies and made this cheesecake. Scrumptious!

Gluten Free Brownies:

1/2 C Butter, melted
1 C Sugar
2 Eggs
1 tsp Vanilla Extract
1/3 C Cocoa
1/4 tsp Salt
1/4 tsp Baking Powder
1/2 C Gluten Free All Purpose Flour (we used Namaste)

Mix together Flour, Cocoa, Salt, and Baking Powder. In a separate bowl combine the melted butter, sugar and vanilla. Then add eggs to the sugar mixture. Add the Flour mixture to the wet ingredients and mix until combined. Spread batter into a springform pan that has been greased (bottom of pan only) bake at 350 degrees for 20 minutes.

While brownie is baking assemble your cheesecake batter.

3 8 oz Pkgs Cream Cheese
1 Can Sweetened Condensed Milk
3 eggs
2 tsp Vanilla Extract
1/2 C Mini Chocolate Chips

Beat cream cheese in mixer until fluffy. Add remaining ingredients and mix until combined.

Once Brownie is done baking remove from oven and lower temperature to 300 degrees. Let Brownie cool for about 10-15 minutes. Smooth Cheesecake Batter over brownie and sprinkle a few more chips over the top. Bake for 50 minutes or until set. Cool Cheesecake before removing from springform pan. Enjoy!
