Alton Brown's Chips & Fish Recipe and made a couple of changes to make it gluten free.
2 C Gluten Free All Purpose Flour
1 TBSP Baking Powder
1 TSP Kosher Salt
1/4 TSP Cayenne Pepper
1 Bottle of Gluten Free Beer
1 LB Halibut
Oil for frying
Mix your dry ingredients together. Quickly whisk in beer until smooth. Refrigerate batter for 30 minutes. If batter is too thick once removed from refrigerator then you can whisk in a bit of water to loosen it up. Dredge Halibut in corn starch and dip into batter. Fry in hot oil until golden brown. Serve with your favorite fries!
