Gluten Free White Pizza

Have you heard of Canyon Bakehouse? They make these amazing gluten free breads. I received the Rosemary & Thyme Focaccia. There are many ways to use focaccia. You can break off pieces and dip into olive oil. You can split it and use it for sandwiches. I wanted to do something a little different so I made white pizza. It was delicious! You can tell when a dish is made with quality ingredients, Canyon Bakehouse definitely uses quality ingredients.

1 1/2 C cooked chicken
1 C carmelized onions
8 oz ricotta cheese
1 egg
1 TBSP parsley (I used dried but you can also use fresh)
1/2 C Parmesan cheese (plus more for sprinkling)
salt & pepper to taste
1/2 tsp garlic powder
2 TBSP olive oil
1 Canyon Bakehouse Rosemary & Thyme Focaccia
4 oz Mozzarella

Split Focaccia and place on baking sheet. Mix garlic powder with olive oil and brush onto Focaccia. Mix together Ricotta, egg, parsley, Parmesan, salt and pepper.

Sprinkle Parmesan over Focaccia. Spread with Ricotta mixture. Spread chicken and onions over Ricotta. Sprinkle with Parmesan and Mozzarella. Bake in 350 degree oven for 20 minutes. Enjoy!
