Hoppin' John is a dish served traditionally on New Year's Day. It thought to bring a prosperous and lucky New Year. There are a million recipes for Hoppin' John and I honestly don't remember where I got mine!
2 C cooked rice
1 can blackeye peas
1 pkg frozen spinach, thawed
4 slices of bacon
1/2 onion minced
1 garlic clove, crushed
1/2 C grated parmesan
1 TBSP butter
salt & pepper to taste
Cut bacon into strips and cook until slightly browned. Add onion and cook until it begins to soften and then add garlic to pan. Take bacon mixture and add to rice along with remaining ingredients. Heat through and serve. Enjoy!

I'm not sure I've ever had Hoppin' John. Is this a southern thing? Up here in the north we celebrate the New Year with Lasagna and Ham. Maybe that's just the italian thing. :)

Never heard of Hoppin' John before. I don't eat Black Eyed peas very often so might try a modified version of the recipe since I am a vegetarian.
