What We're Cooking! - Chicken Chili #Gluten free

I started out wanting to make a chicken stew so that I could use up some vegetables that I have in the fridge, but Ryan wanted Chicken Chili. It was a good pick. This was super yummy and I garnished with green onions and Fritos. And YES! Fritos are gluten free.

2 chicken breasts chopped
1/2 green pepper chopped
1/2 red onion, chopped
1 garlic clove, crushed
chili powder
cayenne powder
dried cilantro (you can use fresh or leave it out if you don't like cilantro)
1 can cannellini beans (also called white kidney beans)
6 C chicken broth
8 oz sour cream
1 TBSP olive oil

Season chicken with salt, pepper, cumin and chili powder. Saute chicken in oil. Add onion and green pepper and cook until soft. Add garlic. Pour Chicken brother over chicken and vegetables bring to boil then add the beans. Once broth has come to a boil lower heat to a simmer and add the rest of your seasonings. I didn't give measurements for these as chili seasoning is a personal thing! Stir in the sour cream. If broth is too soupy you can thicken with a corn starch or arrowroot slurry. Enjoy!
