Paprika Chicken with Garlic Ranch Mashed Potatoes #Gluten Free

Did you know that Hidden Valley Ranch dressing mix is not gluten free? We found out the hard way. I bought some and Ryan got sick.So I have been on a search to make my own Ranch Dressing/Seasoning mix and by George I think I've got it!

Garlic Ranch Mashed Potatoes
6 medium potatoes
3 TBSP butter
4 oz sour cream
2 tsp chives, chopped
2 tsp parsley, chopped (if using fresh I would increase it by 1/2 tsp)
1 clove garlic, crushed OR 1 tsp granulated garlic
2 TBSP Cultured Buttermilk Powder (You can find this in the baking section near the evaporated milk)
Salt and pepper to taste

Cook potatoes in boiling water. Set butter aside. While potatoes are cooking mix together remaining ingredients. Once potatoes are cooked and drained add butter and sour cream mixture. Mash together. Salt and pepper to taste.



I got the idea for the Smoked Paprika Chicken from The Shiksa. I love her blog and this dish did not disappoint. The chicken was delicious and juicy and the leftovers were perfect for chicken salad the next day!
