Thanksgiving is getting closer! This will be our inaugural gluten free Thanksgiving! I am trying to keep to our traditional foods but it is quite the challenge. Stuffing is definitely the favorite at our house and I didn't want to do it with the pre-made gluten free bread. My stuffing is famous and it HAS to be perfect so I decided that we needed to try baking our own bread. Ryan is my baker and she did almost all of the work. We started with this recipe for Amish White Bread and adapted it to be gluten free.
4 C warm water
2/3 C sugar
1 1/2 TBSP active dry yeast
1 1/2 tsp salt
1/4 C oil (I used corn)
6 C gluten free flour (I used Better Batter)
In a large bowl, dissolve the sugar in the warm water. Add the yeast and let sit until yeast begins to foam. Mix salt and oil into yeast. Mix in flour one cup at a time until smooth. Pour batter (yes, it is a batter) into greased loaf pans and cover with damp towel. Let rise for 1 hour. Bake in a 350 degree oven for 50 minutes.
It came out fluffy and delicious! I can't wait for our next Thanksgiving experiment!
