Thanksgiving Leftovers - Turkey Pot Pie with Cream Cheese Crust #Gluten Free

I love a good pot pie. It is the ultimate in comfort food and I found the perfect crust. It is flaky and delicious and you would never know it is gluten free.

1 1/2 C leftover turkey, chopped
1 carrot, chopped
1/2 onion, chopped
1 stalk celery, chopped
2 small potatoes, cooked and chopped
leftover gravy
salt and pepper to taste
1/4 tsp sage
1 tsp dried parley
1 TBSP olive oil
1 TBSP butter

Melt butter in olive oil. Saute carrot, celery and onions. Add seasonings and potatoes. Add enough gravy to moisten all ingredients. Let cool.

2 1/2 C gluten free flour (I use Better Batter)
1/2 tsp salt
2 sticks unsalted butter, cut into pieces (room temperature)
1 8 oz pkg cream cheese, cut into pieces (room temperature)

Mix salt and flour together in food processor.Add butter and cream cheese and process until dough just comes together. Form into a disc and chill for about an hour. You want to keep this dough very cold. It is difficult to work with but well worth the effort.

Once the dough has chilled you can roll out and place dough in a pie dish or use free form. I chose free form. Fill dough with turkey filling and bake at 350 degrees for 30 minutes. Enjoy!
